Corazon de Tierra Restaurant Valle de Guadalupe is one of the region’s top places to eat and experience all the wonderful flavors of the Valley. Voted in 2017 as one of “Latin America’s 50 Best Restaurants”, Corazon de Tierra Restaurant offers distinct dishes that incorporate the unique elements that make food from the Baja California Peninsula so special. Chef Diego Hernandez hails from nearby Ensenada, so the Valley is like home.

He’s worked with some of the greatest Mexican chefs, including Enrique Olvera, Benito Molina, and Guillermo Gonzalez Beristain. The land is sacred for Hernandez, and his food is a reminder that the land is an essential source of life. Corazon de Tierra (translated to “heart of the land”) expresses perfectly the role that sun, soil, and land all play in order to make this valley magnificent. 

The restaurant interior is noteworthy. The dining room walls are glass creating a feeling that you are floating in the middle of the pond while enjoying views of the vineyard, garden, and distant hills. Attention to detail is evident in the decor. Mismatched upholstery makes each chair unique, the wood tables are complimented with bud vases of brightly-colored blooms, and the ceiling and floors are made from rustic wood. All these elements provide an interesting character and a charming dining atmosphere.

All products are grown in the on-site garden and animals are sourced whole from neighbors who raise them in the most natural way. Hernandez and his team process and butcher all ingredients – always mindful of the relationship between food and nature. The menu changes with the availability of ingredients from garden harvest and local producers.
